Phoenix Dancong Oolong Tea A Fragrance That Lives in the Mountains Phoenix Dancong is a semi-oxidized oolong tea from Fenghuang Mountain in Chaozhou, Guangdong, China. Grown in high-altitude terrain where mist lingers and forests thrive, the tea trees develop slowly in fertile soil, allowing complex aromatic compounds to form. This gives Dancong its distinctive “mountain character” — a depth that is both vivid and enduring. What makes this tea truly unique is the tradition of “one tree, one aroma.” Each individual tree carries its own fragrance, resulting in hundreds of natural aroma profiles. Often described as the “perfume of tea,” its fragrance is expressive, layered, and long-lasting — inviting both attention and quiet appreciation. A Rich and Evolving Cup The tea liquor is full-bodied yet smooth, with a quick returning sweetness and a lingering throat sensation. It is highly enduring — capable of 10+ infusions, with each brew revealing a softer, sweeter dimension. Traditionally enjoyed for its ability to aid digestion and refresh the palate, it brings both pleasure and balance to daily life. Two Signature Aromas Honey Orchid (Mi Lan Xiang) A Classic Expression A beloved and iconic variety, blending the sweetness of longan honey with the delicate elegance of orchid blossoms. Aroma The dry leaves carry a soft ripened fruit scent. Once brewed, a rich honeyed fragrance emerges, layered with refined floral notes reminiscent of orchid. Taste The liquor is bright amber, smooth and full-bodied. A clear sweetness unfolds quickly, leaving a long, fragrant finish that lingers on the palate. Da Wu Ye (Large Dark Leaf) A Bold and Expressive Character Named for its broad, deep green leaves, this variety is often associated with gardenia-like aromas, yet can reveal shifting notes of orchid, pomelo blossom, or honey depending on season and craftsmanship. Appearance Tightly rolled, full-bodied leaves with a dark, glossy tone, sometimes marked with subtle reddish hues. Aroma Striking and penetrating, dominated by gardenia-like floral notes, accompanied by hints of cream and honey. Taste Golden and luminous in the cup, rich, fresh, and layered. A slight initial bitterness may appear, but quickly transforms into a lasting sweetness. Leaves (After Brewing) Thick, soft, and vibrant, with the classic “green leaf with red edges” characteristic. Brewing as a Craft To fully awaken its fragrance, precision in brewing is essential. Teaware A thin-walled, wide-mouthed porcelain gaiwan is preferred, allowing for quick heat dissipation and control. Leaf-to-Water Ratio 1:20 (e.g., 6g tea for 120ml water) Water Temperature 100°C (212°F) — boiling water is necessary to release its full aroma. Method Warm the vessel, add the leaves, and gently shake to release the fragrance. Pour water from a higher position or in a circular motion to allow the leaves to fully open. Infusion Time Quick infusions are key — pour out within 3–8 seconds for the best balance. A Personal Note Phoenix Dancong is one of my most cherished teas.
